In a skillet on medium heat toss the cumin until it becomes aromatic, about 3 minutes. Add the vegetable stock, cammed tomatoes and suger. Add the chipolte seasoning if desired. Heat to warm and add salt and pepper to taste. |

Combine ingredients in crockpot, starting with the carrots at the bottom, then potatoes, parsnips, turnips, yam, celery, and onions. Pour tomato mixture over top. |

Cook on low for 3-4 hours or high for 2 just until the potatoes are done and the vegetables are tender. Add kale and salt and pepper and taste test and adjust seasonings if desired. |
